Brooksy was conceived as a speakeasy-style cocktail bar positioned to serve both hotel guests and a discerning CBD clientele. The brief required transforming an underutilised hotel space into a distinct, revenue-generating outlet with its own identity, program, and following.
The concept, name, and positioning were developed from the ground up — drawing on 1920s speakeasy references while grounding the execution in a commercially viable, operationally sound model. Creative direction, bar program strategy, spatial brief, and launch positioning were all developed as part of the advisory scope, in collaboration with the hotel's ownership and design team.
Brooksy now operates as a recognised Sydney venue in its own right — hosting private events, running a curated cocktail program, and maintaining a loyal local membership base through The Brooksy Circle.
An underutilised storage space within the Marriott Circular Quay presented both a challenge and an opportunity. The brief was to create a viable, operationally efficient outlet that could function as a café by day and a bar by night — serving the hotel and capturing the significant foot traffic of the Circular Quay precinct.
The concept was developed around a simple, compelling idea: good things come in three. The dual-mode operation — café morning to afternoon, bar through to late evening — required a clear menu architecture, staffing model, and operational workflow that could transition seamlessly without additional overhead. The result was a laneway venue with a distinct identity embedded within one of Sydney's most prominent hotel properties.
Three Bottle Man continues to operate as a Marriott property venue, maintaining its café-to-bar format and positioning within the Circular Quay competitive set.
Jade Mountain is one of the Caribbean's most distinctive resort properties — known for its dramatic open-wall sanctuaries overlooking the Pitons. The F+B advisory scope encompassed the full pre-opening phase of the resort's food and beverage program, from concept definition through to operational launch.
Working within a property defined by its extraordinary natural setting and ultra-luxury positioning, the advisory focus was on creating an F+B experience that matched the architectural and experiential ambition of the resort — grounded in Caribbean provenance, operationally precise, and calibrated to the expectations of a high-net-worth international guest.
The engagement covered kitchen systems, menu development framework, service philosophy, supplier strategy, and team preparation — ensuring that the F+B program was ready to perform at the level the property demanded from the day of opening.
